Cauliflower Soup
Here’s my recipe for a simple roasted cauliflower soup.
Ingredients:
- 1 large crisp cauliflower
- 1 large yellow onion diced
- 3 crushed cloves garlic
- 3 cups of good stock
- 1 bay leaf
- salt & pepper to taste
- olive oil
- 2 tbsp butter
Method:
- Preheat oven to 425 (gas mark 6). Break cauliflower down into slices and place on parchment covered tray. Drizzle with olive oil and freshly ground black pepper. Bake for 30 mins.
- On stove top, sweat onion over a medium to high heat till soft, add garlic and cook a further min. Add stock, salt, pepper, bay leaf and roasted cauliflower.
- Bring to a boil then reduce heat and simmer for 30 mins covered.
- Remove bay leaf and blend soup with hand blender, add butter, blend again till thick.
- Serve.
And there you have it, a simple easy to make soup that everyone will enjoy.
Note: I use Aurora mushroom stock cubes which depth and umami flavour to the soup.
